muffin makeover

Yesterday, I told B that I’d make muffins and he could have one for breakfast but the day became filled with other things. Around 11 o’clock last night I finally mixed them up. I ate two (three?) before I went to bed at 2 a.m. I’m pretty sure this was the original recipe but I don’t think I ever made it as written. The tweaks started off as minor; last night’s version looked like this:

My version last night, in light of eliminating as much white/refined sugar as I can in our diet, was as follows:
Yield: 12 muffins
Preheat oven to 375F
1 cup orange pulp (leftover from juicing oranges earlier in the day)
1/3 cup vegetable oil
1/2 cup pure liquid honey
1 egg
1/2 cup juice (100% juice, strawberry/banana/citrus - what I had on hand)
1 1/4 cup whole wheat flour
1/4 cup spelt flour
1 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp sea salt
2/3 cup + 1/4 cup rolled oats
1/3 cup flaked bran
1/2 cup chocolate chips (I know, I know… the sugar)
1/2 cup pitted dates, chopped and soaked
- In a large bowl beat together the pulp, oil, egg, honey, and juice.
- In a smaller bowl combine the flours, baking soda, cinnamon, salt, oats, bran, chocolate chips, and dates.
- Add dry ingredients to the wet ingredients and stir just until combined.
- Fill greased muffin cups until 3/4 to nearly full and bake in a preheated oven for 20 to 25 minutes or until they test done.
- Remove immediately from pans to cool.
