muffin makeover

Yesterday, I told B that I’d make muffins and he could have one for breakfast but the day became filled with other things. Around 11 o’clock last night I finally mixed them up. I ate two (three?) before I went to bed at 2 a.m. I’m pretty sure this was the original recipe but I don’t think I ever made it as written. The tweaks started off as minor; last night’s version looked like this:

My version last night, in light of eliminating as much white/refined sugar as I can in our diet, was as follows:

Yield: 12 muffins
Preheat oven to 375F

1 cup orange pulp (leftover from juicing oranges earlier in the day)
1/3 cup vegetable oil
1/2 cup pure liquid honey
1 egg
1/2 cup juice (100% juice, strawberry/banana/citrus - what I had on hand)
1 1/4 cup whole wheat flour
1/4 cup spelt flour
1 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp sea salt
2/3 cup + 1/4 cup rolled oats
1/3 cup flaked bran
1/2 cup chocolate chips (I know, I know… the sugar)
1/2 cup pitted dates, chopped and soaked

  1. In a large bowl beat together the pulp, oil, egg, honey, and juice.
  2. In a smaller bowl combine the flours, baking soda, cinnamon, salt, oats, bran, chocolate chips, and dates.
  3. Add dry ingredients to the wet ingredients and stir just until combined.
  4. Fill greased muffin cups until 3/4 to nearly full and bake in a preheated oven for 20 to 25 minutes or until they test done.
  5. Remove immediately from pans to cool.
Mmmmmmm!!! Out of a dozen, we have only four left. Oops!
