completely crackers

I like crackers. I looooooooove apple butter. I really, really like apple butter on crackers. Since going whole foods, I’ve had no crackers in the house because the ones I see in the grocery store are full of unpronounceable ingredients. I was googling cracker recipes this afternoon and came across this one, which looked really good. I didn’t get much further than that with it though because when I opened my cottage cheese, which would have had about 1/2 cup, the amount needed for the recipe, it was n.a.s.t.y. in an indescribable way. So I ended up making these ones instead.
I wanted small-ish circles but all I could find was a plastic screw-on spice jar lid. The edges were too blunt, hence the jagged cracker edges. Most of them are a little thicker than 1/8" too (oops!) so they’re not totally crispy, though the thinner ones are. Maybe once they cool completely they’ll be a little more crunchy. I did dip into the apple butter and I think I can say that they’ll do. They’re not stuff-your-face awesome but they don’t taste bad either.
